It is about an incomparable in quality tuna that swims in the waters of the island Alonissos. The journey of the tuna fishing starts from November to February with the caique to depart after 2 am from the gulf of Gerakas. The existing species are two, with the most important the yellow fin or the tuna, the way the locals name it. It is about a big yellow tuna that weighs from 60 to 300 kilos. Its productive procedure initially is the careful cleaning, then it is slightly boiled with sea salt, it is packed in jars and preserved up to 5 years. Moreover, it is very nutritional, as it is used in lots of nutritionists programs and it can be combined with a lot of foods, especially salads.
